Raw Heavenly Floral Peach Fudge Cups

The peaches and nectarines have been amazing lately!  Like bite into one and you go to your happy place delicious.  Which is exactly why I thought they would be wonderful in a sweet fudge.  I love raw fudges made with coconut butter that melt slowly in my mouth like white chocolate.  I was thinking peaches and cream, but then I began to think about how wonderful peaches and floral scents are together.  So they became floral peach cups with the addition of lavender and rose.

I made them two layers, one with vanilla and lavender, and the second with peach and rosewater.  They were heavenly, which is why I named them that.  The sweet peaches with the coconut base and floral notes is just perfect!  Make these and you will be on cloud nine when you taste them!

Raw Heavenly Floral Peach Fudge Cups
Makes 10

Vanilla Lavender Layer:
3/4 cup raw coconut butter (not oil) warmed to liquid
2 Tbsp raw coconut nectar, or maple syrup
a pinch sea salt
1/4 cup filtered water
a few drops doTerra lavender essential oil* (optional)
1 Tbsp dried lavender flowers
2 tsp pure vanilla extract

Peach Rose Layer:
3/4 cup pureed organic peaches
3/4 cup raw coconut butter (not oil), warmed to liquid
2 Tbsp raw coconut nectar, or maple syrup
a pinch sea salt
1 tsp rosewater
1 tsp pure vanilla extract

Note: all ingredients in this recipe must be at room temperature or warmer or when you mix them together they will clump up.  For the vanilla lavender layer, in a bowl, whisk together all ingredients until well combined, and spoon into the bottoms of 10 small (peanut butter cup sized) foil tins or molds.  Place in the freezer to harden.  Meanwhile, whisk together all ingredients for the peach rose layer, then spoon on top of the vanilla lavender layer in the tins, smoothing the top.  Place in the freezer to set for about 30 minutes to an hour before enjoying.  Store extra in the fridge.

*doTerra is food grade, if using another brand make sure it is food grade!
