Apricot Blackberry Lavender Popsicles

When I was at the store with Eric the other day, we saw some big piles of Freezies on sale...looking like colored glass tubes, the fake colors pretty but to me unappetizing.  If you don't know what Freezies are they are basically artificially colored sugar water in plastic that you freeze and squeeze out to eat. The thing is I used to practically live off of those things when I was a kid.  I begged my Dad to buy large boxes of them.  Because nothing is better than popsicles to kids on a hot summer day.  Now, however I would much rather have real frozen fruit. It is so simple to make your own popsicles or freezies at home, I don't know why more parents don't do it.  I am kind of a big kid sometimes and I still like popsicles.  So, I have been making a lot of them lately.

The latest of which were these Apricot Blackberry Lavender Popsicles!  Eric gave me a ton of apricots, and I had blackberries on hand, and I thought they would be wonderful with the floral scent of lavender.  I thought about blending it all up together, but then decided two tone pops are more fun.  These were naturally beautiful, refreshing, and perfect for after a long walk in 90 degree heat!

Apricot Blackberry Lavender Popsicles
Makes 6

Apricot layer:
2 cups apricots
juice of one lemon
1 tsp pure vanilla extract
stevia to taste or your choice liquid raw sweetener
1 Tbsp dried lavender flowers

Blackberry layer:
2 cups fresh blackberries
juice of one lemon
1 tsp pure vanilla extract
stevia to taste or your choice liquid raw sweetener

Put all of the apricot layer ingredients in the food processor or high speed blender and blend until smooth.  Pour into 6 popsicle molds. Place the blackberry layer ingredients in the food processor and blend until smooth.  Pour over the apricot layer, then place the sticks in the popsicles and place in the freezer until frozen or overnight.
