Raw Emerald Rice Salad
Ever have one of those days that you seem like you go non-stop from start to finish without a break and you are super tired and need something tasty and filling for dinner because you are starving? Of course you have! I have them a lot actually because I tend to take on a lot and forget to relax (bad habit). I was having one last week and work had been crazy that day and I whipped up this rice for dinner. I had been thinking about it while at work, putting together the ingredients I had at home in my head so I could make it when I arrived home. I was craving something like tabouli, and I had a head of cauliflower, some herbs and kale and a few other veggies...so it became Raw Emerald Rice Salad.
I thought it might be good, but once I tasted it...there was no looking back. I ate 3/4 of the huge batch because it was so fresh, flavorful and delicious. Kind of like tabouli, which I love, but a little different. Trust me, it is something you need to try. I added hemp seeds in for some extra protein since it was my dinner to make it more substantial. This would be a good side dish though as well with something like Raw Pesto Stuffed Roasted Mushrooms.
Raw Emerald Rice Salad
Serves 2-3
1 medium head cauliflower, cut into small pieces
1 bunch kale, torn into pieces
1/4 cup chopped basil
1/4 cup chopped oregano
2 garlic cloves, minced
2 Tbsp nutritional yeast, optional
1/3 cup raw shelled hempseeds
Himalayan salt to taste
1 red bell pepper, diced
1 carrot, peeled and cut julienne
Place the cauliflower in a food processor and pulse until it resembles rice (but not too long or it will become mush). Place in a large bowl. Place the kale in the food processor and pulse until finely chopped (it may take two batches). Place in the bowl with the cauliflower. Add all other ingredients and mix together well. Serve!
